Fonio grain is versatile. Its light, fluffy consistency and nutty, earthy flavour make it ideal for soaking up sauces and spices.

It can be steamed, sautéed, served atop salads or soups, made into porridge, breakfast cereal or cooked like couscous or quinoa.

• For gluten free breakfast cereal: bring 2 cups (500ml) water or milk to a boil, add ¼ cup fonio grain and stir for 5 minutes. Taste to ensure that the grain is done. Add more water if necessary. Sweeten / add milk as desired. You can also top with fruits and nuts.
• To serve as rice: Toast ½ cup in a saucepan with ½ teaspoon of oil, stirring over medium heat. Add a pinch of salt, 1 cup (250ml) of water and stir well until the grain absorbs all liquid. Remove from heat and let it cool. Fluff with a fork and add to your recipes as desired.
