  • For Pancakes: ¾ cup fonio flour + 2 mashed ripe bananas + 1 egg + ½ tsp baking soda (optional) – mix the batter with a little water or milk, and fry on low heat till brown on both sides.
  • For Baking: It serves as a gluten free replacement for white flour. Swap 1 cup white flour with ¾ cup fonio flour.
  • It is also ideal for African ‘swallow meals’ and for thickening sauces.

Ingredients: 100% ground dehulled fonio grain (Digitaria exillis).
